Here are some of the answers to questions we hear most often:

  • How do I make the perfect cup of coffee?

How much coffee you use is really a matter of personal taste and your brewing method. Here are some guidelines:

    • Start with 1-2 rounded tablespoons of ground coffee per six ounces of water.
    • The finer you grind your beans, the stronger your coffee will be.
    • Start with cold, fresh water. If your tap water has a noticeable flavour, use filtered or bottled water.

  • How can I avoid making bitter, burnt-tasting coffee?

The most common reasons for overly bitter or burnt-tasting coffee are keeping coffee too hot for too long, reheating it, and grinding it too finely for the brewing method.

    • Coffee shouldn’t be left on a hot burner for more than 15 minutes.
    • Don’t reheat your coffee once it has gotten cold.
    • Check the instructions from the manufacturer of your coffee maker. Drip coffee makers need a medium grind, a French press wants a coarser grind, and espresso and mocha pots want more finely ground coffee.
    • Be sure to store your coffee properly and use it by the “best when used by” date.

  • How should I store my Eight O’Clock Coffee?

Keeping coffee fresh starts with keeping it away from moisture and moving air. The old saying “store it in a cool, dry place,” is still great advice. We’d add that you should roll the bag down to get rid of excess air and keep it tightly closed. We do not recommend storing in your refrigerator or freezer - both of these environments make condensation possible – and condensation means flavour-destroying moisture.

  • What is that button (or circle) on the bag for?

Every bag of Eight O’Clock Coffee features a freshness valve. During the production process, the bags are vacuum packed to seal in their flavour. Since the beans are packaged while still warm, the one-way freshness valve lets the hot steam out so it doesn’t build up and inflate the bag. The result: fresher coffee, guaranteed.

  • Which Eight O'Clock variety is best for espresso?

Espresso refers to a brewing method, not a type of coffee bean. Since the hot water is only briefly shot through the grounds, espresso is ground very finely. Many people prefer darker roasts, such as Eight O’Clock Bokar Blend, for their espresso, but it can be made using any coffee bean.

  • Which Eight O'Clock varieties are best for iced coffee?

All medium and dark roast varieties of Eight O’Clock are good for iced coffee. The thing to remember about iced coffee is that it tends to get watered down by added ice cubes…and that the cold dulls the taste of coffee. So, whichever variety you decide to use, start with more ground coffee than you normally use and consider freezing some of the coffee in an ice cube tray instead of regular ice cubes.

  • How many calories are in a cup of Eight O’Clock Coffee?

Here’s an encouraging answer: the typical 8 oz. cup of black coffee has only 2 calories. If you add sugar and/or milk or cream, you’re adding calories. For reference, a teaspoon of sugar has 16 calories. A ¼ cup of nonfat milk has 21 calories; a tablespoon of half & half has 20 calories. Note that some of the sweet espresso drinks served at cafes can top 400 calories, thanks to added syrups, sugar and whipped cream.

  • How much caffeine is in a cup of Eight O’Clock Coffee?

Depending on the type of bean, brewing method, brewing time, grind size and amount of coffee used, a five-ounce cup of caffeinated coffee will contain from 70 to 155 milligrams of caffeine.

  • How often should I clean my coffee pot?

You’ll want to check the instructions that came with your coffee brewer. We recommend keeping your coffee-making equipment as clean as possible, at least rinsing the pot after every use. For a deeper cleaning, most coffee makers recommend the use of a vinegar and water mixture instead of harsh detergents .
